Horchata Tres Leches
Sponge Cake
- 1 Cup All Purpose Flour
- 3/4 Cup Cake Flour
- 1 1/2 Cup Caster Sugar(I blend mine on a blender)
- 2 Tsp Baking Powder
- 1/2 Tsp Salt
- 1/2 Cup Unsalted Butter
- 1 Cup Milk
- 2 Eggs
- 2 Egg Whites
- 1 Tbsp Vanilla
Horchata Tres Leches Blend
- 1 Cup Sesame Seeds(Ajonjoli)
- 2 Cups Cold Water
- 1-14oz Can Condensed Milk
- 1 Cup Evaporated Milk
- 2oz Semi Sweet Chocolate
- 1/2 Cup Milk
- 1/2 Tsp Vanilla
Whipped Cream
- 1 Cup Heavy Whipping Cream
- 2 Tbsp Sugar
- 1 Tsp Vanilla
- Pinch of Cinnamon for Garnish
Instructions
Sponge Cake
- Preheat Oven to 350F and spray a 13x9 Pan with Non stick spray.
- Bring water to a boil. I use a 2 Qt Sauce Pan. You’re going to want to fill it about 3/4 of the way you want to make sure you don’t have water going over when you insert your mixing bowl.
- Add your eggs to your mixing bowl and using the pan as a double boiler for your mixing bowl whisk until combined. Quickly add your sugar. This step is crucial you don’t want your eggs to begin to cook because the bowl will get hot very quickly.
- Whisk your eggs and Sugar until Combined well. Continue to stir your Eggs to avoid them cooking. When the sugar is melted you’re ready for the next step.
- Remove egg and sugar mixture and beat on a stand mixer with the whisk attachment on High Speed for 6 minutes. While your eggs are mixing you’re going to want to melt the butter and milk together either on a pan or microwave.
- The mixture will become thicker and lighter in color. This is called the Ribbon Stage although this is a more runny ribbon stage since were using egg whites.
- On a separate bowl sift together the flour, baking powder and salt and incorporate to your ribbon stage eggs and sugar in two additions whisking together but do not over mix.
- Add Vanilla to your butter and milk and on the bowl where initially you had your flour you’re going to move half of your batter from the bowl.
- Add your milk and butter mixture to the separated bowl with the batter and whisk until combined. Then you will add that mixture to the other portion of the batter that was left on your mixing bowl. Whisk until combined but do not over mix we want a soft moist cake.
- Bake for 25-30 mins or until a toothpick comes out clean it will be a beautiful light color.
- Allow cake to cool and begin to work on your Horchata Tres Leches mixture.
Horchata Tres Leches Blend
- Toast your sesame seeds on Med heat. Mine came out perfect at about the 8 mins mark but its crucial to stir them the whole time because they can burn. Also keep in mind different pans and different stoves may result in either a shorter or longer cooking time for toasting your sesame seeds. Do not over cook the sesame the taste gets stronger and bitter and can be unpleasant.
- Let the cool for a couple of mins. The sesame seeds will still be warm and that is how we want them. Add them to a blender with 2 cups of water and blend until they are completely blended.
- Using a strainer you will want to strain as much liquid as you can out of the blended sesame seeds. I got 1 1/2 Cups exactly. We will only be using 1 1/2 cups for the Tres Leches Blend.
- On a separate Bowl whisk together the 1 1/2 cups of Sesame Water, 1 Cup Evaporated milk, 1/2 Cup of Milk, Condensed milk and Vanilla.
Whipped Cream
- Pour Whipping cream, sugar and vanilla on a mixing bowl with a whisk attachment or a hand mixer and whisk until you have firm peaks but still a soft whipped cream.
Finishing Touches
- Poke Holes on your Cooled Cake and Pour the Horchata Tres Leches Blend on top and all around your cake. Let it sit until it soaks it all in could be a good 20-30 mins.
- Top with your Fresh Whipped cream and garnish with a little Ground Cinnamon for a Beautiful Presentation and little extra taste. Refrigerate this cake is serves Cold.
TIPS
This cake is so delicious. Part of the reason why a lot of my recipes have great results is because I choose my ingredients carefully. Ive been baking a really long time and I can advice that depending on the ingredients you use the results can change each time. Now there are a lot of great Condensed milk brands out there but I am very faithful to Eagle Brand.
The reason why I will only use Eagle brand (not sponsored) is because I enjoy the flavor the best out of all the ones I have used. I love the results in flavor to my all Tres Leches recipes or anything I use condensed milk in. If you can get your hands on some Eagle Brand milk I highly recommend it!
