Ingredients

Orange Olive Oil Cake

  • 1 3/4 Cups All Purpose Flour
  • 1 Cup Sugar
  • 2 Tbsp Brown Sugar
  • 2 Tsp Baking Powder
  • 1/4 Tsp Baking soda
  • 1/2 Tsp salt
  • 1/8 Tsp Nutmeg
  • 3 Eggs
  • 3/4 Cup Drizzle Me Olive Oil
  • 3/4 Cup freshly squeezed orange juice
  • Zest from one orange
  • 1 Tsp Vanilla

Pomegranite Glaze

  • 1 1/2 Cups Powdered Sugar
  • 3 1/2 Tbsp Freshly squeezed Pomegranite Juice
  • 3 Cups Sifted Powdered Sugar
  • 1 Tbsp Freshly Squeezed Orange Juice

Instructions

Sponge Cake

  1. Preheat Oven to 350F and prepare a 9" Cake pan with Non stick spray and parchment paper.
  2. On a bowl sift flour,baking powder, baking soda, nutmeg and salt.
  3. On a separate bowl whisk until combined your sugars, olive oil, eggs, orange juice vanilla and orange zest.
  4. In two additions add your dry ingredients onto your wet ingredients and whisk until combined.
  5. Bake for 50-60 mins or until a toothpick comes out clean it will be a beautiful light color.My cake baked at 55 mins.
  6. Allow cake to cool.

Pomegranite Glaze

  1. On a bowl whisk together your powdered sugar, orange juice and pomegranite juice until combined well.
  2. Pour the glaze over your cake and allow to spread. Then go over any spots. Garnich with orange slices and pomegranite seeds and enjoy!
Tips: Do not over mix your cake to avoid getting a dry cake. Cake can be stored in fridge for up to 5 days. Take out a slice and allow to room temp to enjoy!
