Buttermilk Banana Chocolate Chip Pancakes
Ingredients
- 1 3/4 Cups All Purpose flour
- 2 Tbsp Sugar
- 1 1/2 Tsp Baking Powder
- 3/4 Tsp Baking Soda
- 1/2 Tsp Salt
- 2 Medium Ripe Bananas
- 1 Cup Buttermilk
- 1/4 Cup Milk
- 2 Eggs
- 2 Tbsp Melted Butter
- 1/2 Tsp Vanilla
- 3/4 Cup Milk Chocolate Chips
Instructions
All of your wet ingredients should be room temperature.
- In a large bowl, combine flour, sugar, baking powder, baking soda and salt.
- In a separate bowl beat together buttermilk, milk, eggs, vanilla and melted butter. Dry ingredients and wet ingredients will be kept separate until ready to cook.
- You will want to mash your bananas on a separate bowl right before you’re going to cook the pancakes.
- When ready to cook fold the dry ingredients onto the wet ingredients. Stir with a wooden spoon or spatula until blended together. Do not over stir!
- Next, you will fold your mashed bananas and 1/3 Cup chocolate chips onto the batter until blended together.
- Heat a lightly oiled griddle or frying pan over medium/high heat.
- Scoop the batter onto the griddle using 1/2 cup for each pancake. Add a couple extra chocolate chips to each pancake to the top side while on griddle. Lightly brown on both sides and serve hot!
- Makes about 8 pancakes.
Tips
- Bananas should be ripe for a better outcome and taste.
- Do not add too many chocolate Chips to the batter once its on the griddle because they can burn and can cause an unpleasant taste.
- Do not over mix the batter it will make dense pancakes.
- These freeze well for one month.
