Turtle Chocolate Covered Strawberries

Still thinking on what to do for your special someone for Valentines day. I have just the thing for you. Chocolate covered strawberries will never be overrated but when we dress them up with a couple extra things they are out of this world!
Yes i’m talking caramel and crunchy stuff… pecans. Make them into turtle chocolate covered strawberries and there is just no way to go wrong! Your loved one will thank you, trust me.
Ingredients
- 1 Dozen Large Strawberries
- 1 Bag 10 Oz Ghirardelli Milk Chocolate Melting Wafers (or your preference)
- 2 Cups of Pecan chips
Caramel
- 1/2 Cup Unsalted Butter
- 2 Cup Brown Sugar
- 1/4 Cup Heavy Cream
- 3/4 Cup Light Corn Syrup
Instructions
To make these you have to follow these steps precisely. Your caramel and your chocolate need to cool before preparing your turtle strawberries.
- Make your caramel sauce 2 hours before you’re ready to make your strawberries. Your caramel will be thin at first but as it cools it will thicken and will be the consistency we need it to be to dip the strawberries. Have a bowl with the pecans ready to dip.
- On a sauce pan on med heat melt your butter
- Once butter is melted add your brown sugar stirring until combined well.
- Add your heavy cream and corn syrup and stir with a wooden spoon or whisk until combined
- Bring caramel to a boil and then pour into a deep medium cup or bowl.
- Allow caramel to cool for about 1 1/2 hours. Caramel will thicken as it cools.
- Melt your chocolate wafers on a microwave safe bowl. I start with one minute stir then do another 45 seconds.
- Allow chocolate to cool but not to harden.
- Place parchment paper on a cookie sheet pan.
- Dip your strawberries and place on parchment paper the caramel will be stiffer but some will come off. Allow them to set for about 30 mins. I use two cookie sheets to transfer the strawberries with caramel once they’ve released some of the caramel.
- Once all your strawberries are dipped in caramel and set you may need to just remove a little of the stretchy caramel that will lift then dip into chocolate and right away dip into the pecan chips.
- Allow them to cool and enjoy or store in fridge for 2-3 days.
Tips
- Make sure to dry your strawberries well before dipping or they will not hold into the caramel or chocolate.
- Make sure your caramel and your chocolate are cooled they may still feel a tiny bit warm to the touch but the caramel sauce still needs to be stiff but runny so that you are able to get a clean dip with your strawberries.
- Store caramel in fridge for up to 2 weeks and heat the portions needed as you use it.
