Oreo No Bake Tiramisu Pie
Ingredients
The Crust
- 2 1/4 Cups Oreo Crumbs (No cream)
- 2 Tbsp Sugar
- 1/2 Cup Unsalted Melted Butter
Eggless Tiramisu
- 12oz Room Temperature Mascarpone
- 2 1/2 Cups Heavy Whipping Cream
- 2/3 Cup + 2 Tbsp Sugar
- 1 Tsp Vanilla
- 1/2 Cup Chopped Oreos
- Truwhip for topping
- Pack of Lady Fingers
- 8oz Strong Coffee or Espresso

Instructions
- Prepare 9' Springform pan with non stick spray and parchment paper to line the bottom.
- Prepare the coffee and allow to cool completely.
- In a bowl combine the cookie crumbs and sugar and give it a good mix. Add melted butter and combine. The mixture will be a little wet and crumbly. Spread evenly around pan and press it down and to the sides until it's firm and smooth.
- Refrigerate while you make the filling.
- In a stand mixer with a whisk attachment place the mascarpone, heavy whipping cream, sugar and vanilla. Beat on low speed until it starts to mix. Once the mixture is pretty combined bump the speed up to high and it only takes a couple of minutes and the mixture will be fluffy and creamy.
- Add chopped oreos and mix until combined.
- Spread 1/2 of filling evenly around the crust.
- Soak the lady fingers for 20-30 seconds making sure you soak it on both sides.
- Cover over the filled mascarpone making them as even as possible. There will be smaller spots you will have to cut the lady finger to fit into the smaller spaces. But make sure to cover the whole top.
- Spread the remainning half of the mascarpone filling over the lady fingers.
- Refrigerate for 3-4 hours to set.
- Once you're ready to serve carefully remove from the pan and spread Truwhip on top. I used an offset spatula but a spoon works great.
- Dust cocoa powder on top and enjoy! <
TIPS
- The mascarpone should only be allowed to room temp for about 30-45 mins depending on the temp of your home. It should be soft but still have a cool temperature. It is important to allow to soften if not it will not mix well and you will have an unpleasant lumpy mixture.
- It takes about 1-2 minutes for the mixture to get to its desired consistency. If you over beat it can get a buttery like texture. It needs to be smooth and have medium peaks where its fluffy but you’re able to pipe with the mixture.
- Tiramisu pie will last in the fridge about 5 days keep refrigerated.
