Brown Butter Lemon Blueberry Crumble Cookies

These make an amazing Summer bake. Everything anout this cookie is spectacular.

Ingredients

  • 1 1/4 Cups Packed Brown Sugar
  • 1/4 Cup Sugar
  • 1 Cup Brown Butter
  • 2 Large Eggs (Room Temp)
  • 2 Tsp Vanilla
  • 2 1/2 Cups of All Purpose Flour(Spoon & Leveled)
  • 1 Tsp Baking Soda
  • 1 Tsp Cinnamon
  • 1/2 Tsp Salt
  • 3/4 Cups White Chocolate Chips
  • 1 Cup Fresh Blueberries

Crumble

  • 5 TBPS Melted Butter
  • 1/3 Cup Sugar
  • 1/4 Cup Brown Sugar
  • 1/2 Cup All Purpose Flour
  • 3 TBSP Oatmeal
  • Pinch of Salt
  • Lemon Glaze

  • 3oz Cream Cheese
  • 1 1/2 Cups Powdered Sugar
  • 2 Tbsp Half & Half
  • 1 Tbsp Lemon Juice
  • 1/2 Tsp Vanilla
  • Instructions

    Make sure your eggs are room temperature and this dough will come together beautifully! Makes 16 Cookies

    1. Begin by cutting butter into cubes. Next, In a heavy saucepan heat butter over Medium heat to begin the browning process. Stir constantly until the butter begins to turn into a golden brown color. It will be foamy and that is ok. Once the butter has reached that beautiful golden brown color remove from heat and place into a heat safe bowl to cool.
    2. While your butter cools sift your dry ingredients and make the crumble.
    3. To prepare the crumble melt the butter and allow to cool. Next, add all the other ingridients and mix with a spoon until everything is incorporated it will be a sandy consistency.
    4. Place half of the crumble in a baking pan with parchment paper and bake for 5 minutes. This will be used to finish adding crumble to the cookies ones baked. When the crumble is baked just set aside and allow to cool.
    5. In a large bowl combine your brown butter and sugars and whisk until combined.
    6. Add eggs and vanilla and whisk until combined.
    7. Add your sifted dry ingredients into the wet mixture and fold until just combined. Do not over mix.
    8. Add 1 TBPS of flour to coat the frozen blueberries and add to dough, add white chocolate chips and fold gently until combined.
    9. Cookies need to be baked right away the dough does not store well.
    10. Drop the dough by 1/4 cup balls or use an ice cream scoop. Press enough crumble to cover the top of the cookie. Bake 6 at a time in a large cookie sheet.
    11. Bake at 350 degrees for 10 minutes until golden brown on the bottom.
    12. When cookies are ready you can fix the shape with a large round cookie cutter or a big measuring cup.(Videos on my insta for reference)
    13. When you fix the shape of your cookies if you choose to.
    14. While the cookies are still warm add more crumble on top and allow to cool.
    15. Once the cookies are cooled make your glaze by mixing your powdered sugar, half & Half, lemon juice and vanilla. Stir until combined.
    16. With a spoon glaze the top of your cookies and allow glaze to set for 10-15 mins. It may still be a little runny thats ok its delicious.

    TIPS

    1. Frozen Blueberries are the best option to get the best results.
    2. Cookies will look a little undone once taken out they will finish baking in the baking sheet out of the oven. Allow them to cool completely to set.
