The best cookie bar you could make this fall! These are brown butter cookie bars using pumpkin spice marshmallows and theyre delicious!

Ingredients

  • 1 1/4 Cups Packed Brown Sugar
  • 1/4 Cup Sugar
  • 1 Cup Brown Butter
  • 2 Large Eggs (Room Temp)
  • 1 Tsp Vanilla
  • 2 1/2 Cups of All Purpose Flour(Spoon & Leveled)
  • 1 Tsp Baking Soda
  • 1 Tsp Cinnamon
  • 1 1/2 Cups Pumpkin Spice Marshmallows
  • 1 Cup Semi Sweet Chocolate Chips
  • 1 Cup Chocolate Chunks
  • 2 Tbsp Graham Cracker Crumbs

Instructions

Make sure your eggs are room temperature and this dough will come together beautifully!

  1. Preheat your oven to 350F and spray an 8"x8" pan with non stick spray and parchment paper(make sure you leave the sides longer to be able to pull out).
  2. Begin by cutting butter into cubes. Next, In a heavy saucepan heat butter over Medium heat to begin the browning process. Stir constantly until the butter begins to turn into a golden brown color. It will be foamy and that is ok. Once the butter has reached that beautiful golden brown color remove from heat and place into a heat safe bowl to cool.
  3. While your butter cools sift your dry ingredients.
  4. In a large bowl combine your brown butter and sugars and whisk until combined.
  5. Add eggs and vanilla and whisk until combined.
  6. Add your sifted dry ingredients into the wet mixture and fold until just combined. Do not over mix.
  7. Add chocolate chunks and chocolate chips and fold until combined. Do not over mix.
  8. Add 3/4 Of your cookie dough evenly spread through the pan.
  9. Place the marshmallows evenly on top of the cookie dough.
  10. Grab the left over cookie dough and place on top of the fluff leaving some spaces in between so you can see the Fluff.
  11. Add more chocolate chips, chocolate chunks and graham cracker crumbs to the pieces of cookie dough on top.
  12. Cookie need to be baked right away the dough does not store well.
  13. Bake at 350 degrees for 25-30 minutes until golden brown and steady on the sides and middle.
  14. When the cookie comes out of the oven add more chocolate chipss and chocolate chunks on top.
  15. Allow cookie to cool completely before removing from the pan. Cut them into 9 even pieces.

TIPS

  1. Cookies will look a little undone once taken out they will finish baking in the baking sheet out of the oven. Allow them to cool completely to set.
