Samoa Cupcakes

Ingredients

Cupcake

  • 1 Box Duncan Dines Devils Food
  • 1 Cup Water
  • 3 Eggs
  • 1/3 Cup Oil

Toasted Coconut

  • 1/2 Cup Toasted Coconut
  • Salted Caramel Buttercream

    • 1 1/2 Cups Unsalted Butter
    • 3 Cups Sifted Powdered Sugar
    • 2 Tsbp Milk
    • 1 Tsp Vanilla
    • 1/3 Cup Smuckers Salted Caramel

    Instructions

    1. Make Sure all of your wet ingredients are room temperature so they incorporate well.
    2. Preheat your oven to 350F Degrees.
    3. Prepare your cupcake pans with the cupcake liners.
    4. Follow the instructions from your cake box.
    5. Fill your cupcake liners about 2/3 of the way.
    6. Bake for 17-20 Mins or until a toothpick inserted in the center comes out clean.

    Salted Buttercream
    1. Make sure your butter is room temperature.
    2. In a stand mixer with a paddle attachment beat your butter for about 5 mins.
    3. Add your sugar in low speed one cup at a time.
    4. Add vanilla and milk.
    5. Scrape the sides and bottom of your bowl and add salted caramel. Next, whisk for another 5 minutes until creamy. Scrape the sides and bottom of your bowl and mix for another 2 minutes.
    6. Toasted Coconut

  • On a medium size pan on med heat add your coconut flakes. move around the pan every 30 seconds it will be turning golden brown slowly. Continue to do so until its a light brown. Not all of it has to be fully toasted some shades will be darker then others but you want to prevent burning it. Once its toasted remove from heat add to a plate to cool completely.
  • Once evrything is ready pipe your cupcakes, swirl some caramel and top with some toasted coconut. You will have a beautiful and delicious dessert.
