Banana Coffee Cake Cookies
- 1 1/4 Cups Packed Brown Sugar
- 1/4 Cup Sugar
- 3/4 Cup Brown Butter
- 1/2 Cup Mashed Banana
- 2 Large Eggs (Room Temp)
- 1 Tsp Vanilla
- 2 1/2 Cups of All Purpose Flour(Spoon & Leveled)
- 2 Tsp Cinnamon
- 1 Tsp Baking Soda
Cinnamon Crumble
Cream Cheese Glaze

Make sure your eggs are room temperature and this dough will come together beautifully!

Makes about 16 Cookies
- Begin by cutting the butter into cubes. Next, In a heavy saucepan heat butter over Medium heat to begin the browning process. Stir constantly until the butter begins to turn into a golden brown color. It will be foamy and that is ok. Once the butter has reached that beautiful golden brown color remove from heat and place into a heat safe bowl to cool.
- While your brown butter cools prepare the crumble by melting the butter and once its cooled a little bit add the flour, sugars, cinnamon and salt and stir until combined well. Once thats mixed well refrigerate until you make the cookie dough.
- Sift your dry ingredients.
- Preheat the oven to 350'F
- In a large bowl combine your brown butter, mashed bananas, eggs, sugars and vanilla and whisk until combined.
- Add your sifted dry ingredients into the wet mixture and fold until just combined. Do not over mix.
- Add half of your crumble mixture into the batter and fold until combined. Do not over mix.
- Add more of the crumble and fold gently again but do not over mix.
- Cookies need to be baked right away the dough does not store well.
- Scoop your cookie dough with an ice cream scoop 6 at a time onto a large cookie sheet making sure thats there's crumble on the top parts of your cookie so that you have that beautiful coffee cake effect.
- Bake for 10 minutes.
- Allow cookies to cool completely.
- While your cookies are cooling make the cream cheese glaze by adding all of the cream cheese glaze ingredients in a bowl and beating with a hand mixer on low speed increasing your speed to medium as the ingredients begin to incorporate.
- Once the glaze is incorporated well drizzle on top of your cookies.
TIPS
- This cookie dough cannot be made in advanced it does not store well.
- Cookies will look a little undone once taken out they will finish baking in the baking sheet out of the oven. Allow them to cool completely to set.
- Cookies can be refrigerated up to 5 days. Take out the desired amount and microwave in 30 second intervals until you bring the cookie back to room temp.
